Determination of Lipid Peroxidation in Refined and Unrefined Vegetable Oils from the Market of Bosnia and Herzegovina

Abstract:
The oxidation (or peroxidation) of lipids is the main cause of deterioration in quality, or food spoilage. Oxidative degradation processes depend on the raw materials, the composition of fats, storage conditions and ingredients that speed up or slow down the reaction. The peroxide number indicates if there has been a change in the oxidation of fats and oils. This paper included samples of refined vegetable oil from sunflower, olive, corn, soybeans and seeds of grapes, as well as unrefined vegetable oils of canola, flax, sesame and pumpkin. The total amount of hydrperokside lipids (peroxide value) was determined using iodometric method. It was found that the peroxide value, as a measure of oxidation and changes in the quality of edible oils, stayed within the maximum allowed limits. It has been observed that sunflower and olive oils dominate the market of Bosnia and Herzegovina and that they have a higher peroxide value than those of corn, soya and grape seed (sunflower from 1.98 to 2.66 mmol/kg), (olives from 0.33 to 3, 66 mmol/kg), (corn from 1.19 to 2.41 mmol/kg), (soybeans 1.98 to 2.66 mmol/kg) and (grapeseed 1.21 mmol/kg). Unrefined vegetable oils have a small peroxide value ranging from 0.49 mmol/kg (sesame) to 3.3 mmol/kg (pumpkin), which is certainly within the permissible values (7,5mmola/kg). In addition, fatty acid composition and identification of oxidation products is determined very successfully using gas chromatographie analysis, which, in comparison with the previous results, gives a clearer picture of the process of oxidation of these samples.
